 Since 1986 I have been running my wine diploma course on a five-week basis in Auckland and for one day around New Zealand and at a selection of overseas venues. Nearly 20,000 people have now attended my courses. In addition to a lot of "need to know" information about wine (such as wine & food matching, wine cellaring, wine types, wine faults, serving temperatures etc) the course encourages students to increase their understanding of wine by adopting a process that I call "wine profiling".
